Avocado Egg Salad
I did a search for Thanksgiving recipes & came up with this twist on Egg Salad. It's not as traditional as other recipes you might find for this time of year, but I love egg salad & I love avocado, so I'm going to add it to the menu this year for our day after thanksgiving feast. It's always nice to have something new in the mix to add to your leftover menu + it's a family favorite for the person who posted the recipe, so it's got to be a good one. I can't wait to try it!
Ingredients
* 6 avocados - peeled, pitted, and cubed
* 1 teaspoon fresh lemon juice
* 5 hard-cooked eggs, chopped
* 1/2 red onion, minced
* 1/2 cup light mayonnaise
* 1 tablespoon milk
* 3 hard-cooked eggs, sliced
* 1/2 teaspoon paprika
Directions
1. Toss avocado cubes with lemon juice in a serving bowl; mix avocado with chopped egg and onion. Whisk together the mayonnaise and milk; add to avocado mixture and gently mix. Arrange the remaining eggs sliced atop the salad in rows. Sprinkle top with paprika.
