Friday's Recipe - Strawberry Freezer Jam


It is strawberry season at our house, which means picking, eating, and freezing strawberry syrup and jam. We LOVE it! We eat it on pancakes, ice-cream, and PB&J's all year long. I love the freezer jam, because it still tastes so fresh and not processed. The recipe only calls for 1 1/2 cups sugar, so it's also not such a sugar fest to eat it. It has just the right amount of sugar to bring out the sweet taste in the strawberries, which is what makes it so delicious.



It's super easy to make = another bonus!

I use the BALL pectin recipe. I'm not sure if it would work with others as well, but it might.

Wash/rinse and stem your berries
Crush/mash strawberries - I use a potato masher, but if you want it at a finer consistency, you could use a food processor.

RECIPE:

4 cups mashed berries
1 pkg. pectin/3 TBLS.
1 1/2 cups sugar

mix the pectin and sugar together. Add it to the 4 cups mashed berries. Mix until dissolved(about 3 minutes).

Pour into freezer containers. Let set for a few hours and put into freezer.
