It's blueberry picking time, and we LOVE blueberries! The only problem is that they are a little harder picking than strawberries. They aren't as big, so it takes a little more time to fill up the bucket. I was so excited to go and pick blueberries this year. We had some friends come with us, and we got out early to try & beat the heat. The weather was beautiful & there was a bit of a breeze as we started to pick. However, as we found ourselves in the middle of the blueberry bushes the sun came out & we began to sweat. we managed to step in a couple of ant hills in the process of picking, and kids began to whine, so about 30 minutes into our blueberry adventure we decided we were finished. We did capture some cute pictures and managed to get about a gallon of berries that we made into a syrup(recipe below) for pancakes the next morning - yummmmmm
Blueberry Syrup/Sauce
10 oz. blueberries (fresh or frozen)
1/2 cup water
1/2 cup granulated sugar
1 Tbs. cornstarch
1 Tbs. lemon juice
Combine all ingredients together in saucepan. Stir well. Heat and stir over medium heat until boiling. Simmer gently about 5 minutes until berries release their juices and begins to thicken. Serve warm or cold. It's also really good on ice cream.
